In this paper, we have established a system in which betalamic
acid was synthesized in vitro on a large scale using a recombinant
DOD protein; the betalamic acid was then used for preparation of
betaxanthin species with amino acids and amines. This system has
the considerable advantage of circumventing the laborious meth-
ods currently available for preparing small amounts of betax-
anthins from large amounts of plant materials. We believe that
the establishment of a method for preparing pure betaxanthins
will greatly aid the assessment of their antioxidant activity, their
radical-scavenging activity, and their possible benefits to human
health.
