In Table 2, fractionation, which was carried out in the present
work by retrieving samples after different stages as extraction
proceeded, is compared to both techniques mentioned previ-
ously: discontinuous extraction (Jarén-Galán and others 1999)
and fractional separation (Nguyen and others 1998). A ratio of
carotenoid concentration between the 2 fractions obtained dur-
ing extraction of 6.2 and 9.8, respectively, was achieved and is
shown in Table 2 as concentration factor. In the 1st case, the
same material was extracted a 2nd time at increased pressure. In
the 2nd work, pressure and temperature conditions in each of 2
separator vessels are precisely chosen to precipitate a particular
component.
Table 2 shows that the obtained fractions strongly differed in
pigment concentration, that is carotenoid was highly concentrat-
ed within one fraction being indicated by the concentration fac-
tor. This factor was considerably higher using the process of con-
stant separation conditions from this work, compared to the the
carotenoid fraction was analyzed since it changed from the so-
called linear to the nonlinear extraction stage, as shown in Table

Although more than 20 peaks were observed in chromato-
grams of paprika extract, carotenoids were grouped in 3 catego-
ries: -carotene, free xanthophylls, and xanthophyll esters.
During the linear period (see Figure 8), a light orange extract
was recovered, containing about 50% w/w of free carotenoids

(
xanthophylls and -carotene) from total pigments. As the ex-

traction progressed, the ratio carotenoids/diester (mainly of cap-
santhin and capsorubin) decreased quickly from the linear to
the non-linear period and remained below 4% to 5% w/w, as
shown in Figure 4. A monoester, with polarity and molecular
weight comprehended among free xanthophylls and diesters,
was also analyzed. The composition of this compound remained
practically constant during the extraction.
A comparison between extraction of paprika powder and pa-
prika oleoresin on glass beads with respect to carotenoid frac-
tionation is also shown in Table 3 and Figure 8. No noticeable dif-
ference in carotenoid concentration was observed. Therefore,
fractionation process was not affected by the presence of cellular
structure and was produced exclusively by solubility of each
compound in SC-CO2.

tracts preferably freed carotenoids at the beginning and caro-
tenoid esters at a later stage. The concentration in the SC-CO2
can be estimated using an on-line VIS-photometer.
