The inhibition of LDL oxidation was measured by the reported
method (Kamiya et al., 2004). LDL (100 g/mL) was incubated in a
phosphate-bufferedsaline(pH7.4,1 mL)containing25 MCuSO ,in
the absence (control) or presence of purified fatty acid glucosides
50 g/mL) for 6 h at 37 8C. The reaction mixture (1 mL) (15% TCA,
.375% TBA and 0.25 N hydrochloric acid) was added to the LDL
mixture prepared as above. The resultant mixture was heated for
