Description
Acid Red 18, also known as Food Red No. 102, is an artificial coloring food additive used as a dye. Its color changes in different acidic solutions, turning purple in strong sulfuric acid, yellow in nitric acid solution, and red in strong hydrochloric acid. When sodium hydroxide is added, it turns brown.

Purification Methods
Dissolve the dye in the minimum quantity of boiling water, filter and enough EtOH is added to precipitate ca 80% of the dye. This process is repeated until a solution of the dye in aqueous 20% pyridine has a constant extinction coefficient. [Beilstein 16 I 306.]
