General Description
Naringinase, also known as naringin dihydrolase, is an enzyme commonly produced by several species of fungi and bacteria. It is primarily responsible for breaking down naringin, a bitter compound found in citrus fruits, into prunin and hesperidin. Naringinase is also capable of breaking down other flavonoids, alcohols and glucosides. This enzyme has been used widely in food and beverage industries to decrease the bitterness in citrus fruit juices and grapefruit especially.
