Description
Propenyl Guaethol, also known as trans-2-Ethoxy-5-(1-propenyl)phenol, is a chemical compound with a vanilla-like odor and flavor. It exists in two forms: (Z)(melting point 35-36°C) and (E)(melting point 86°C), with the (E)-isomer having a sweet vanilla-like odor. Propenyl Guaethol is a free-flowing white powder that is very soluble in fats, edible solvents, and essential oils, but only slightly soluble in water. It can be prepared from isosafrole by reaction with methylmagnesium chloride or by ethylation of isoeugenol followed by selective demethylation with alkali.
Uses
Used in Flavor and Fragrance Industry:
Propenyl Guaethol is used as an artificial vanilla flavoring and flavor enhancer due to its strong vanilla-like taste and odor. It has a taste threshold value of 25 ppm and an aroma threshold value of 400 ppb, with aroma characteristics at 1.0% being vanilla, sweet, spicy, slightly phenolic, and having a heliotropine-like creaminess.
Used in Chemical Synthesis:
Propenyl Guaethol is also used in the synthesis of other chemical compounds, such as 2S-((E)-2-ethoxy-5-propenyl-phenoxy)-1-(3,4,5-trimethoxy-phenyl)-propane-1-one.
Preparation
By alkaline hydrolysis of 1-ethoxy-2-methoxy-4-propenyl benzene in ethanol or methanol solution at 150 to 190°C under
pressure; or in ethylene glycol solution at the same temperature under atmospheric pressure; by saponification and contemporary
transposition of the double bond starting from 1-ethoxy-2-methoxy-4-allyl benzene.
