EC 3.2.1.1, also known as α-amylase, is an enzyme that catalyzes the hydrolysis of α-1,4-glycosidic bonds in polysaccharides, such as starch and glycogen. It is produced by various sources, including Bacillus licheniformis (Product A3403) and Bacillus amyloliquefaciens (Product A7595). α-Amylase has been widely used in various applications, including plant metabolism studies, starch hydrolysis, and enzyme inhibitory activity evaluation.

Uses

Used in Plant Metabolism Studies:
α-Amylase is used as a research tool for studying plant metabolism in species such as Arabidopsis. It helps in understanding the role of starch and glycogen in plant growth and development.
Used in Starch Hydrolysis:
α-Amylase is used in the hydrolysis of α bonds of α-linked polysaccharides, such as starch and glycogen. It has been employed in various applications, including the hydrolysis of sweetpotato amylopectin to identify cluster structure, the conversion of sago palm starch to reducing sugars for ethanol fermentation by Saccharomyces cerevisiae FNCC 3012, and the catalysis of amylolysis of gelatinized waxy maize starch to produce reducing sugars.
Used in Enzyme Inhibitory Activity Evaluation:
α-Amylase from Bacillus sp. has been used in the digestion of lyophilized microalgae samples and to evaluate α-amylase inhibitory activity in marine algae samples and Myrmecodia platytyrea. This application helps in identifying potential enzyme inhibitors and their potential use in various industries.
